Slow Cooker Honey Garlic Beef Two Ways

Did you ever read Choose Your Own Adventure books as a kid? Because this Slow Cooker Honey Garlic Beef recipe is basically the culinary equivalent of one of those books.

Just 10 minutes of easy prep in the morning opens up a whole world of meal prep possibilities.

You can turn this recipe into rice bowls. You can make lunchtime lettuce wraps in 10 minutes flat. You can even stick it in the freezer and save it for a busy night.

Doesn’t get much better than that if you’re busy and trying to keep it healthy!


Slow Cooker Honey Garlic Beef

Yields: 12 servings
Prep Time: 10 minutes
Cook Time: 8 hours
Difficulty: Easy

Ingredients:

  • 1 cup beef stock 
  • 4 tablespoons honey
  • 4 tablespoons coconut sugar 
  • 2 tablespoons tamari
  • 1 teaspoon Worcestershire sauce
  • 6 cloves garlic, minced
  • 3 pounds beef chuck roast

Directions:

In the bottom of a 5- or 6-quart slow cooker, combine the stock, honey, sugar, tamari, Worcestershire sauce, and garlic. Mix well.

Cut the beef in half lengthwise. Place in slow cooker and turn to coat on all sides. Cover and cook on low for 8 hours.

Move beef from slow cooker to a large bowl, and shred with two forks. Return to slow cooker, and mix with cooking juices.

Once meat has cooled, you can store it in an airtight container for up to 4 days in the refrigerator or freeze for up to 3 months.


So let’s talk about what to do with 12 servings of delicious, tender, slow-cooked beef (assuming your family doesn’t eat it all straight out of the pot).

For dinner, I like this recipe over rice salad. Here’s how I do it.

Yields: 4 servings
Prep Time: 5 minutes
Cook Time: 20 minutes (does not count beef cook time)
Difficulty: Easy

Ingredients:

  • 4.2 ounces basmati rice, uncooked
  • 2 carrots, peeled and julienned
  • 1 cucumber, julienned
  • 1 bell pepper, julienned
  • 1 tablespoon sesame seeds, to garnish

Directions:

Cook the rice according to package directions. Prepare vegetables while rice is cooking (I recommend prepping the veggies for the leftover lettuce wraps at the same time and storing them in your fridge. That recipe is below). Assemble bowls by dividing cooked rice, veggies, and beef (about 1/3 of recipe above) into 4 bowls. Sprinkle with sesame seeds before serving.

Now, might’ve picked up on the fact that you’ll have a LOT of beef left over from dinner. You could freeze it, or you could make these easy and delicious beef lettuce wraps for lunch!


Beef Lettuce Wraps

Yields: 4 servings
Prep Time: 10 minutes
Cook Time: nada
Difficulty: Easy

Ingredients:

  • 4 servings slow cooker honey garlic beef (see above)
  • 1 cucumber, cut into matchsticks
  • 2 carrots, cut into matchsticks
  • 8 radishes, sliced
  • 16 lettuce leaves
  • 1 tablespoon sesame seeds

Directions:

Gently reheat slow cooker honey garlic beef in medium saucepan, or in microwave, until warmed through.

Assemble the wraps by topping lettuce leaves with beef, cucumber, carrots, and radishes. Sprinkle with sesame seeds to serve.
